Green manure with legumes is practiced in this olive grovenose, crucifers and grasses. The herbs are chopped and left in the field in order to enrich the soil with organic substance and nutritional elements; also the residuespruning are shredded and left on the ground. Almost all the plots are irrigated with drip systems in order to overcome periods of summer water stress. Adversities are controlled with methods permitted in organic farming. Copper-based products are used for fungal pathogens, while for fly defense, mass capture traps with attractants are used.natural, kaolin and copper based habit removers are used.
The olive groves are located along the entire coastal strip and are mostly made up of small plots withcenturies-old olive trees and newly planted olive trees. The surfacetotal is approximately 2 hectares with a consistency of approximately550 trees. The surfaces, almost all terraced with typical dry stone walls, are surrounded by Mediterranean scrub plants and ancient carob trees.
